Sixteen soups to warm up with this Succot

Hearty, healthy and so easy to prep ahead – soup is always in season

Quick and easy – with Succot coming around it’s definitely soup season. With so many al fresco meals, we’ll all need a repertoire of recipes. 

1. Mixed mushroom – Silvia Nacamulli’s seasonal recipe uses fresh and dried fungi for a flavour-filled broth that’s light enough for a starter but hearty enough as lunch with plenty of bread and cheese. 

2. Chicken soup – Most will have their favourite recipe but mine for the perfect chicken soup really is full of flavour and even comes with a handy You Tube video showing you how I make it. 

3. Butternut and tomato soup is bound to be popular and Anna Weimar’s recipe using tomatoes, squash and walnuts has a very seasonal – and Scandinavian – flavour.

4. Spiced apple, butternut and lentil is an interesting combination from Denise Phillips using very seasonal squash and apples with nutritional powerhouse, lentils, to keep everyone healthy.  

5. Butternut and carrot is another lovely combination (from Lisa Roukin) which has a lovely root veg sweetness.

6. Carrot orange and ginger Josh Katz’s delicious spin on carrot soup adds zesty oranges and warm ginger notes for lovely layers of autumn flavours. 

7. Jerusalem artichoke and sweet potato make a delicious combination especially topped with Silvia Nacamulli’s crunchy vegetable crisps and herb oil. 

8. The Italian wedding soup from Cook for Good’s brilliant Soup for Good cookbook is a deliciously hearty recipe packed with orzo pasta and chicken meatballs that’s a meal in itself.

9. Avgolemono (chicken soup with lemon and egg) is a Sephardic recipe to which Joanna Nissim has also added orzo pasta and shredded chicken to make a tasty light meal. Also great for using up any leftover chicken soup/chicken. 

10. Cinnamon and pumpkin make perfect partners in this sunny-coloured soup from Denise Phillips that’s even more fun served in a hollowed out pumpkin shell.

11. Polish classic krupnik soup loaded with mushrooms and barley is a treat from Judi Rose. Shower with plenty of dill for a fresh, herby flavour. 

12. Loved by all lentil aromatic soup from Cook for Good’s Soup for Good book, does exactly what it says. Warm spices and nourishing lentils make this a perfect lunch option.

13. Dr Michelle Braude’s healthy butternut and apple soup is packed with spices and such a gorgeous orange colour just looking at it makes you feel good.

14. Carrot and courgette make perfect partners in Lisa Roukin’s smooth soup which has a fun topping of crunchy vegetable crisps. 

15. Superfast pea soup has become a staple in our house since I wrote this recipe. It’s made in minutes and the best way I can think of to use a bag of frozen peas. 

16. Courgette pea and mint are a classic combination that Sarah Mann-Yeager pairs with tasty, granary toast batons for a warming lunch or supper.
