Ultimate air fryer apricot pecan and pistachio matzah granola

Simply the best Pesach breakfast option ever

Since I wrote my matzah granola recipe in 2019 the air fryer has become a fixture in our kitchens. The chances are that some of you will be using one for your Pesach prep. The gadget makes light work of one of my favourite Passover staples. It can be prepared in under 20 minutes. Feel free to swap in whichever dried fruits or nuts you have in stock. It’s great to snack on as it is or turn it into brunch-ready granola parfaits by sprinkling it over thick yoghurt and berries in individual glasses. Serve the parfaits immediately to avoid your granola going soggy.

Method:

  • Mix the oil, syrup, vanilla extract, cinnamon and nuts in a large bowl.
  • Break the matzah sheets into the bowl and mix well to coat.
  • Line your air fryer basket with a piece of foil to make a basket and grease with a very thin schmear of flavourless oil. Or you could place a piece of baking parchment on top of the foil — just enough to line the base.
  • Air fry for 8 – 12 minutes at 165°C giving the mixture a stir halfway through. Mine took 12 minutes but it’s worth checking from 8 minutes as air fryers can vary. If it seems soft when you take it out the oven don’t worry, it will crisp up as it cools.
  • Tip into a bowl to finish cooling and then stir in the dried fruits.
  • Store in an airtight container.

Ingredients

2 tbsp olive oil
60ml maple syrup
2 tbsp runny honey (omit if making vegan)
1 tsp ground cinnamon
1 tsp vanilla extract
a pinch of sea salt
30g pecans, roughly chopped
30g walnuts, roughly chopped
30g pistachio nuts, roughly chopped
3 crushed matzah sheets
50g dried apricots
30g dried cranberries

For 4 granola berry parfaits:
400g Greek yoghurt, or whatever yoghurt you prefer use plant-based if vegan
300g berries (a mixture of blueberries, raspberries and strawberries)
