Spirulina truffles

Turn the chocolate treat into a nutritional powerhouse

A very special energy bite bursting with vitality, trying spirulina may be out of your comfort zone, but it is a healthy way to boost nutrients in one bite.

Almonds are one of the most nutritious nuts you can find. They are rich in protein, vitamins, minerals and fibre. Spirulina, a type of blue-green algae that grows in rivers and freshwater lakes, contains all the vitamins, minerals, protein and essential fatty acids needed to sustain life. Cinnamon supports the regulation of blood sugar levels.

Method:

  • Mix the almonds and spirulina together, using your hands.
  • Add the maple syrup and mix until you reach a dough-like consistency.
  • Add the water and mix it until the mix sticks together.
  • Take out a teaspoonful and shape into balls about 2cm in diameter. Roll in the cinnamon to coat.
  • For an extra treat, drizzle some dark chocolate on top.

1 ¼ cups (180g) ground almonds
1 tsp spirulina
1 drizzle maple syrup
1 tbsp water
Ground cinnamon, to coat
Dark chocolate, for drizzling (optional)
