This gorgeously green soup is delicious hot or chilled.

1 medium onion chopped, approx 150g
1 medium potato diced, approx 200g
1 litre chicken or vegetable stock
1-2 cloves garlic peeled
2 medium courgettes, approx 350-400g
200g frozen peas
Maldon salt and freshly ground pepper, to taste
6-8 fresh mint leaves, to taste
Double cream or Alpro parev cream to swirl
For the batons:
1 granary loaf, unsliced
1 tbsp vegetable oil
1 clove garlic, finely minced
Freshly ground black pepper
