Sephardi charoset energy balls

A deliciously different way to enjoy the Seder staple – and snack over Pesach

Serves: 30 approx

These are a lovely way to eat your charoset which are traditional for some Sephardim. They also make a nutritious snack during Pesach.Method:

  • Place the chopped apples, orange zest and juice, red wine, cinnamon and ground nuts in a food processor.
  • Blend until the consistency is almost smooth. If you prefer you can stop sooner to keep a little bit of a crunchy texture.
  • If the blended mixture is dry and will not stick together you can add in a little water — adding a tablespoon at a time until it has is sufficiently sticky so that you can roll it into balls.
  • If it’s too wet, you can add a little more of the ground nuts.
  • Roll into balls the size of large marbles and you can then roll the balls into whichever coating you prefer or a mixture of the choices.

Ingredients

150g pitted dates
½ medium apple peeled, cored and roughly chopped
1 orange to provide 1tsp packed finely grated fresh orange zest and 10 ml fresh orange juice
10ml red wine of your choice (preferably not sweet)
½ tsp cinnamon
200g+ mixture of ground walnuts and ground almonds
To coat:
Extra ground almonds and walnuts
Ground cinnamon
5 almonds roughly chopped
5 walnuts roughly chopped to decorate
