20g butter + more to cook with
1 large egg
170ml milk
100g plain white flour
For the filling
250g fresh ricotta cheese
200g fresh spinach
40g Parmesan or grana padano cheese, grated
¼ tsp nutmeg
Sea salt and black pepper to taste
For the tomato sauce and assembly
2-3 tbsp extra-virgin olive oil
½ onion, finely sliced or chopped
350ml passata
5-6 fresh basil leaves
60ml double cream
Freshly grated parmesan or grana padano cheese
