½ onion, 1 carrot, ½ stalk celery, chopped
3 cloves garlic, sliced
120ml olive oil
A small pinch chilli flakes
A large handful any combination of parsley, thyme, marjoram, basil
3 large handfuls roughly chopped any combination of kale, Swiss chard, spinach, cabbage (cooked or raw) any stems and leaves, ribs and cores, cooked or raw
180g/½ a tin of well-chopped or drained tinned tomatoes
Some chopped, cooked root vegetables — if they are there and need to be cooked, or cooked and need to be eaten
About 1. 3 litres cooked beans (approximately 1.2kg – 3 tins)
A Parmesan rind
2 litres approx any combination of bean broth, stock and liquid from tins of tomatoes
Any amount (up to 200 g) small pasta such as orecchiette, little tubes or small penne
Pesto, olive tapenade, fresh ricotta or parsley for garnish
