1⁄4 cup (60ml) olive oil
1 medium yellow onion, finely chopped
1 large leek, white part only, finely chopped
8 garlic cloves, finely chopped
5 pounds butternut squash, peeled and cut into 1⁄2-inch chunks
5 large carrots, peeled and cut into 1⁄4–inch chunks

1 tbsp salt
