For the crepe mixture:
12 eggs, beaten
8-10 tbsp potato flour
180-200ml water
½ -1 tsp salt
Filling:
1-2 tbsp oil
1 onion, finely chopped
1 celery stick, finely chopped
1 carrot, peeled and finely chopped
2 sprigs fresh thyme
2 cloves garlic finely chopped
500g minced beef
75 ml red wine, optional
1 beef stock cube crumbled in a little boiling water
Salt and black pepper
Handful of chopped parsley
A jar of ready-made, kosher for Passover marinara sauce
