Avocado and berry smoothie bowl

This healthy and filling breakfast is naturally sweeter than you expect and makes a brilliant Pesach option

Serves: 2

Make sure you have bananas in the freezer to make this super healthy Pesach breakfast. It’s smooth and creamy and the toasted nuts add crunch. Ideally, make just before serving to avoid the avocados browning. 

Method:
  • Place all the smoothie ingredients in a blender and blitz until creamy and smooth. 
  • Add more almond milk (or water) to thin to a consistency you like. 
  • Taste and adjust the flavour as needed. The riper your bananas, the sweeter it will be. If undersweet, you could add some maple syrup to taste, Add more spinach for a brighter green hue, or more almond milk or yoghurt for creaminess.
  • For more protein, add nut butter. This also offsets/enhances the natural sweetness of the smoothie.
  • Transfer to a bowl and top with your favourite berries and nuts.

Ingredients

2 bananas, previously sliced and frozen
½ ripe avocado
100g baby spinach
1 kiwi, peeled 
75g kale, large stems removed
150g strawberries and/ or raspberries
100ml almond milk or yogurt
2 tbsp almond or peanut butter (use almond if you don't eat kitniyot over Pesach)
Garnish:
Fresh berries
Raw or toasted nuts, almonds, pecan, walnuts etc
