Zesty pink grapefruit, blush orange and tangerine tart

Citruse fruits add a gorgeous pop of colour to your table

Serves: 10 - 12

This is a stunning show stopper. There are several steps but all are pretty simple. 

Ingredients

For the pastry:

180g spelt flour (or white 00 if preferred) 

Zest ½ lemon

90g chilled butter

60g caster sugar

Pinch of salt

2 egg yolks

1-2 tbsp chilled water 

For the filling:

Juice of 4-5 tangerines or clementines

Juice of 1 pink grapefruit

Juice of 1 blush (or regular) orange

Zest of ½ lemon

½ tsp cinnamon

1 tbsp maple syrup

500g (approx. 4) Royal Gala or Braeburn apples

1 tbsp orange marmalade

For the caramelized tangerine decoration 

400ml water

150g caster sugar

4-5 unwaxed tangerines/clementines, thinly sliced into rounds, peel included

A handful of chopped pistachio to decorate.
