Watermelon and lime feta fizz cocktail

Trust us - this is delicious, and perfect for a Royal toast

A celebration needs a cocktail or mocktail and this quintessential Israeli combo is perfect. You can make it without the feta, but trust us on this— it really adds so much freshness and flavour. It works with or without alcohol so make a big batch, split it and add alcohol for those who wish. This quantity makes enough for only one, so you’ll need to increase the ingredients for your party crowd.

Method:

  • Place watermelon, mint and lime in a blender and blitz on high until smooth.

  • Taste and add some icing sugar if it needs it, then blitz again. Pass through a mesh strainer to get rid of any lumps. Your prep is done!

  • Serve either in a tall glass over ice, or in a coupe/martini glass.

  • For a tall glass: place the feta in the bottom of the glass, add lots of ice, and pour in the watermelon mix. Add the gin and gently mix using a long spoon. Top up with the fizz of choice, and garnish with mint.

  • For a coupe or martini glass: place the watermelon mix and gin in a large jam jar (or a cocktail shaker) with ice. Shake vigorously to combine and chill it. Place the feta in the bottom of your glass, and pour the chilled watermelon mixture over it. Top up with your fizz of choice, and garnish with mint.

Ingredients

150g watermelon, chopped into cubes
1-2 sprigs of mint
½ lime, juice only
1-2 tsp icing sugar (optional)
25-50ml gin (depending on how strong you like it)
60ml tonic / sparkling water
1 tbsp feta cheese, crumbled
