Veal with peas and preserved lemon

This warming dish is ideal on a cold winter’s evening.

Cook: 2 - 2.5 hours

Serves: 4-6

Replace the veal with beef or lamb for a deeper flavor, but increased the cooking time by about an hour, depending on the cut. The preserved lemons are added once the veal is cooked giving it a delicious twist. Serve with rice, couscous or simply with bread.

Ingredients

80ml extra virgin olive oil

1 large onion, finely chopped

150-200ml white wine

1.2 Kg. diced veal

150g frozen petit pois or peas

2-3 tbsp preserved lemons, finely chopped

Flat leaf parsley, finely chopped,

Salt and black pepper to taste
