150 ml warm milk
1 tbsp sugar
30g butter
2 egg yolks
1 tsp vanilla extract
7g salt
300g flour, ideally ‘00’
Approx 500ml. sunflower oil for frying
200g crème de marron chestnut spread, approximately
100g chestnut puree
50g icing sugar
¼ tsp vanilla extract
100ml double cream
Marron glace, icing sugar or golden caster sugar to decorate
