8 Pink Lady apples, peeled and cored and thinly sliced
228g self-raising flour
1 large, egg (beaten)
113g slightly salted butter
113g caster sugar
1 tsp vanilla bean paste or 1 vanilla bean pod, seeded
2 pinches sea salt
For the middle layers
1 ½ tsp cinnamon
40g caster sugar
Garnish
200 ml crème fraiche or dairy-free coconut yogurt
2 tbsp icing sugar
1 tsp vanilla bean paste or 1 vanilla pod, de seeded
1 tbsp icing sugar for dusting over the cake (optional)
