Amba is the star of the show in this autumn salad.
October 25, 2018 08:36450g baby carrots, scrubbed (or use regular carrots, peeled and cut lengthways into 4 long wedges)
2 large fennel bulbs, cut lengthways into 1cm slices, any fronds reserved
2 red onions, quartered
2 tbsp olive oil
salt and freshly ground black pepper
1 tbsp each of sesame and pumpkin seeds
1 tsp nigella seeds
for the dressing
2 tbsp tahini
2 tbsp savoury mango pickle (amba) not mango chutney
juice of 1 lemon
salt and freshly ground black pepper
