This pudding is delicious with ice cream. You may want to make double the quantity of sauce to serve in a jug on the side.

200g Medjool dates (pitted)
1 tsp bicarbonate of soda
2 tbsp date syrup
175g oat flour, sifted to remove any husks
1 ½ tsp baking powder (gluten-free)
4 pinches Maldon sea salt
125g coconut sugar
80ml pure rapeseed oil
2 large eggs
1 tsp vanilla bean paste or 1 whole vanilla pod deseeded
For the sesame caramel sauce
5 tbsp tahini
4 tbsp cold water
4 tbsp date syrup
3 tbsp honey or agave
1 tsp vanilla bean paste of 1 whole vanilla pod deseeded
2-3 pinches Maldon, sea salt
