Fresh and zingy fish burgers make a healthy weeknight treat

294g wild-caught salmon fillet, skin removed
48g, basil leaves loosely packed
2 tbsp lemon zest (zest of 2 lemons)
2 tbsp fresh lemon juice (30ml)
50g spring onion, chopped
2 tsp sriracha hot sauce
1 ½ tsp salt
1 ½ tsp sugar
½ tsp black pepper
Oil for the pan (choose olive, rapeseed, or sunflower oil)
To serve: toasted burger buns, lettuce, and tomato slices for serving
