This fruit-filled treat is perfect for Rosh Hashanah

1 tbsp plus 1 tsp kosher salt, plus more for seasoning
1½ tsp freshly ground black pepper, plus more for seasoning
60ml vegetable oil
3 large onions, thinly sliced
2 tbsp plain or gluten-free flour
10 garlic cloves, peeled and left whole
2 tbsp tomato paste
480ml dry white wine
360ml beef/chicken broth
80ml pomegranate molasses
4 dried figs, chopped
60ml honey
1½ tsp red wine vinegar
1 tbsp ground cumin
1 tsp dried red pepper flakes
6 fresh figs,*quartered (or extra pomegranate seeds)
90g pomegranate seeds
