No-sugar banana bread

A healthy, super fast lunch box or teatime treat

When your children need a sweet tasting treat, this moist and delicious healthy bake should do the trick. Add a handful of chopped pecans for a bit of crunch.

Method

  • Preheat the oven to 180°C and grease a 1lb loaf tin.
  • Mix together the flour, baking powder, cinnamon and sultanas in a large bowl.
  • In a separate bowl, mash the bananas, then add the melted butter, egg, vanilla and milk. Mix well.
  • Combine the wet and dry mixtures and stir well.
  • Pour into the tin.
  • Cook for about 40 minutes, until a toothpick comes out clean.
  • Cool in the tin for about 10 minutes before turning out.

Ingredients

125g wholemeal self-raising flour
½ tsp baking powder
2 tsp ground cinnamon

75g raisins or sultanas
50g butter (or dairy-free equivalent), melted
2 tsp vanilla essence
1 egg
1 tbsp milk (or dairy-free equivalent)
3 medium ripe bananas, mashed
