'Full of fruit and nut' biscotti

These are delicious with coffee. Swap in your favourite nuts or dried fruits, or even add chocolate chips.

  • Heat your oven to 180°C.
  • In a large bowl, using a wooden spoon, mix the eggs, flour and sugar until you form a smooth batter.
  • Add the rest of the ingredients and mix to distribute them evenly.
  • Transfer to a parchment-lined loaf tin and bake for 40-45 minutes or until the loaf is dry to the touch and feels very firm.
  • Take out of the oven and allow to cool enough to handle. Reduce oven temperature to 150°C.
  • Using a serrated knife, slice off 3-4cm thick slices. Place on a baking tray lined with paper, and bake for 10 minutes more until golden.
  • Store in an airtight container.

3 eggs

90g self-raising flour

90g caster sugar

100g whole almonds

100g whole hazelnuts

8 dried apricots, cut in strips

4 dried figs, cut in strips

100g dried cranberries
