Broccoli and mixed seed salad

  • Put eggs in a pan of cold water, bring to the boil and simmer for six minutes. Cool under cold water, peel and cut in half.
  • Steam or boil the broccoli for three to four minutes until just cooked. Drain and refresh under cold water.
  • Combine the seeds, soy sauce and honey and set aside.
  • Mix the cooked lentils with kale, avocado and broccoli.
  • For the dressing, combine the olive oil and lemon juice and season, then add to the salad ingredients and mix well.
  • Arrange the halved eggs on top, then scatter over the seeds and basil leaves.
