150g golden caster sugar
3 eggs
½ tsp almond extract
125g self-raising flour
100g ground almonds
200g figs, stalks removed (plus extra to garnish if required)
100g pomegranate seeds
For the topping;
2 tbsp flaked almonds, toasted
2 tbsp jam (apricot or fig)
