The UK arm of PJ Library, the charity that sends Jewish books to children, will be five years old next week. They asked five food writers to create a recipe to mark their special day. How better, I thought, than a cake you can make in a minutes!
It’s not quite up there with a baked sponge, but it’s moist, chocolatey and simple enough for little hands to make. A perfect treat when you need a cake in a hurry.

- In a large mug, whisk together the egg and oill with a fork.
- Stir in the buttermilk, vanilla, and sugar.
- Add the cocoa, flour, salt, and vinegar.
- Whisk the batter until smooth and divide between two smaller mugs. Do not fill more than halfway.
- Microwave separately for 1 ½ to 2 ½ minutes each until risen and firm.
- If making the icing, whilst the cakes are cooling, beat the butter, vanilla and icing sugar until smooth, then beat in the cream cheese.
- Once the cakes are cool, cover with icing and shower with sprinkles.
