The Dons were ahead within five minutes after a collector's item: a very rare goal from Jordan Rinsler. And it was 2-0 soon after, as Cohen scored his first goal of the game.
SPEC pulled one back before Cohen's stunning free-kick gave the visitors a 3-1 lead at the break.
SPEC brought the deficit back to one soon after the restart, but the impressive Cohen restored the two-goal cushion with a sublime chip with his weak foot to bring up his hat-trick.
And, Cohen, the Dons' top-scorer still had time to win a penalty and then get himself back up to slot it home, putting the game out of sight. SPEC scored another goal late on but it proved to be nothing more than a consolation.
Zack Neiman, Jamie Smaje and Josh Green registered for SPEC.
Dons manager, Jamie Nagioff, said: "That's two wins from two now for 2020 and we look completely unrecognisable compared to the side that was struggling for points earlier this season.
"It was a well-fought game but our early lead, coupled with a constant threat going forward, meant we never looked like losing the game."
Nagioff added: "We're already looking forward to next week's game and if we put in a similar performance to the last two matches, we believe we can make it three wins on the bounce."
SPEC player-manager Ricky Lawrence told JC Sport: “It was a disappointing day at the office.”
