Seven winning matzah recipes

Love it or hate it, Pesach’s all about matzah and this is why yours should be

Forget the afflliction part, this unleavened bread is a blank, crunchy canvas that lends itself to a world of flavours .

And I’m willing to bet my last cinnamon ball that those of you currently not on Team Matzah will be converted by these tasty treats. Just call it your flexible friend.

First up is my matzah granola (aka no-grainola) is so more-ish you’ll be dipping into it long after breakfast time.

Talking of which, Amir Batito’s raspberry matzah brei is the perfect basis for a luxurious, lazy brunch. Serve alongside thick, Greek yoghurt, fruit compote and more of that granola.

If you prefer a more savoury start, head straight to my baked matzah brei – packed with healthy veggies, it’s the love child of a frittata and our favourite traditional breakfast treat.

Matzah pizza is a favourite with children (and adults) everywhere. This version from Italian Jewish food expert Silvia Nacamulli is a real winner. Freestyle your own — simple cheese and tomato brings a smile to my family’s faces every time.

Silvia’s got another Italian-inspired recipe that will become a new family favourite. And if you do have any leftover, this matzah lasagne just gets better and better.

The very versatile cracker is also a great sub for tortilla chips. These cheese-topped matzah nachos are perfect for snacking or a light supper.

If you buy matzah for no other reason, you need to make this salted caramel chocolate treat — millionaire’s matzah. It’s made in minutes and I guarantee it will be gone even quicker.

And - a bonus eighth recipe for those of you who are counting - because it's so clever: Chanie Apfelbaum's fresh, flavoured Passover Panzanella salad, which is crowned with nothing less than matzah brei croutons. Is there nothing this unleavened loaf cannot do? Genius.

You just might want to keep eating it all year round.
