Super fast to prepare, this rainbow of bite-sized fruit and nut-packed nuggets make a healthy celebration treat. Choose one flavour or make them all — the choice is yours!

Method
- For each variety of energy ball, use a food processor to blend all the ingredients for that flavour for one to two minutes to form a ‘dough’.
- Roll the mixture into 2cm-diameter balls (approximately), then roall the pistachio balls in pistachio nuts to coat them and the almond apricot balls in ground almonds.
- Lay prepared energy balls on a tray or in a single layer in a box and refrigerate for about an hour to set.
- Before serving, roll the pecan and date balls in cocoa powder.
