Chicken wings with spicy harissa sauce

These fiery chicken wings make a delicious starter or part of a mezze main course and will spice up your Seder.

Choose a harissa with no unnecessary additives. It should be made from dried hot  pepper, garlic, oil and salt. Nothing else.
 
 
 
  • Put the crushed garlic, harissa, salt, oil and spices in a large cooking pot.
  • Add the chicken wings and coat with the paste by rubbing with your hands.
  • Add enough water to cover the wings
  • Cook on high heat at the beginning and once it comes to a boil, turn down to medium heat, stirring frequently for about one hour until the wings are fully cooked
  • Transfer to a serving dish and served garnished with parsley.
Ingredients

10 cloves garlic, peeled and crushed

4 tbsp harissa

1 tsp salt

1 tbs ground turmeric

1 tbs sweet paprika powder (NOT smoked)

6 tbsp sunflower or vegetable oil

20-25 chicken wings 

1 litre water

15g flat leaf parsley, roughly chopped
