Liri Albag’s favourite cheese boyikos

Liri Albag’s favourite recipe:
Liri, from Moshav Yarhiv, loves people and is always surrounded by friends. She has a heart of gold, loves life, and is confident in herself. Liri dreams of becoming an interior designer.

Makes: 12 – 15 rolls
 

Ingredients:

For the dough:

200g (7 oz) soft butter

2 large eggs

250g (10 oz) 3% fat yogurt

250g (10oz) 5 - 9% fat white cheese

300g (11oz) 16% fat feta cheese, crumbled

480g (4 cups) plain flour

5g (1 envelope) baking powder

½ tsp salt

For egg wash:

1 egg, beaten

2 tbsp sesame seeds

Method:
 

  • Prepare the dough in a large mixer. Start by using most of the flour, then incorporate the rest of the ingredients. The dough should be elastic but not sticky. If it is sticky, add some of the flour left in reserve.
  • Preheat an oven to 180°C (350°F).
  • Line a baking sheet with parchment paper.
  • Form balls from the dough (approximately the size of ping pong balls). Place them on a baking sheet and brush each with egg wash.
  • Sprinkle sesame seeds on top of each ball.
  • Bake for 20 minutes until golden brown.
  • Serve either hot or at room temperature with freshly cut vegetables and sliced hard boiled eggs.
