Celery, fig and pistachio salad

This fresh, vibrant salad is the perfect combination of sweet, tangy and crunchy

Make as close to possible before serving. Mix the dressing ingredients separately, and pour over the salad just before serving. You can use any nuts or fruits you like.

Method

  • Slice the celery into thin strips. Chop all the dried fruits into 1-2cm chunks, and add to bowl together with the celery.
  • Roughly chop the mint, and add to bowl
  • Roughly chop the nuts, and add to bowl.
  • In a separate jar or bowl, place all the dressing ingredients, and shake or stir well.
  • When you’re ready to serve, mix well with the dressing, place in a serving bowl and garnish with fresh mint. Serve immediately.
Ingredients

1 large whole celery, washed well



5 dried apricots



2 dried figs



100g dried cranberries (preferably without added sugar)



2 sprigs of fresh mint



40g roasted salted cashew nuts



40g roasted salted pistachios (shelled)



For the dressing



60ml olive oil



Juice of 1 lemon



1 tsp honey



½ tsp salt



¼ tsp ground black pepper
