A change from your usual churros recipe, using sliced crumpets that go extra crispy in the air fryer, served with sliced strawberries and drizzled with melted chocolate. It will blow your mind.
Method:
- Line the air fryer with baking parchment.
- In a bowl, whisk the egg, protein powder, milk and ½ teaspoon of the cinnamon together. Add the crumpet pieces, making sure they’re all evenly coated, and leave for a few minutes to soak up the mixture.
- Spread the crumpet pieces out in the lined air fryer and air-fry at 180°C for 8–9 minutes, turning them halfway.
- Meanwhile, mix the remaining cinnamon with the sweetener and set aside.
- Put the melted butter in a bowl, add the crispy crumpet bites to coat them, then sprinkle over the cinnamon sweetener mix.
- Serve with the strawberries and a drizzle of chocolate.
