For the filling:
2 medium, floury potatoes (preferably Desiree, Russet or Maris Piper)
Flat leaf parsley, handful, chopped
Salt and pepper
2 tsp olive oil.
One egg per parcel brique
Two slices of cheese per brique (any sliced cheese you like)
1 pack of brique / brik pastry (one packet contains 10 sheets)
Oil for frying – about 1 litre
