1 medium butternut squash, halved lengthways and deseeded
2 tbsp olive oil, plus extra for brushing
90g (3¼oz) quinoa
500ml (17fl oz/2 cups) vegetable stock
60g (2¼oz) baby spinach, chopped
60g (2¼oz) pecans, chopped
40g (1½oz) dried cranberries
30g (1oz) feta, crumbled
