Crunchy and crisp with a vegan mayo dip - what's not to love?

 Generously spoon over cooling mayonnaise, inspired by the deli counter, with flavours of dill, gherkins and capers. Simple, wholesome comfort food.

Ingredients

2 large baking potatoes,
peeled and coarsely grated
1 small red onion, coarsely grated
2 tsp plain flour
Pinch of smoked paprika
Generous pinch of sea salt
6 tbsp sunflower oil
4 tbsp vegan mayonnaise
Small handful of dill, finely chopped
1 small pickled gherkin, finely chopped
1 tsp capers, drained
