Moroccan Jews serve these hand-formed yeasted crepes warm from the pan and spread with butter, honey, jam, or chopped pistachios.

Method

Ingredients

1 packet (7 g) active dry yeast



1 tbsp sugar



355 ml warm water



560g plain flour, plus more as needed



1½ tsp kosher salt



Vegetable oil, for greasing bowl, dough, and frying



Optional toppings: salted butter, honey, jam, or finely chopped pistachios
