I first came across this salad at a catering stall. I liked it so much that I asked them for the recipe. They kindly shared it with me, and now it’s part of my salad repertoire! You can add a handful of chopped coriander for extra flavour.
Remove the tough outer layer from the leeks. Trim off the root end and the green part. Slice the leeks lengthways, and then cut across finely into slices 5mm thick.
Place the leeks, cherry tomatoes and sweetcorn in a serving bowl.
Mix the mayonnaise with the mustard. Add the mayonnaise mixture to the leek mixture. Gently mix together until well coated. Season with salt and pepper. Serve.
