Cod ‘Parmigiana’

Tomatoes, aubergines and parmesan make perfect partners for delicate cod.

Griddling the aubergine slices gives them a smoky flavour plus they look pretty. If you prefer you can fry them until crispy which is also delicious.

Ingredients

3–4 tbsp extra virgin olive oil



½ onion, finely sliced



400g tin plum tomatoes in tomato juice



Fresh basil leaves



1 -2 medium aubergines



Extra virgin olive oil



Fresh flat-leaf parsley, finely chopped



4 x 160-180g cod loins



Sea salt and black pepper
