A fresh and fabulous spring/summer recipe that zings with flavour

100g fresh peas
Zest and juice of ½ lemon
3 tbsp Herby Dressing (see below)
1 small handful of mint leaves
1 handful of pea shoots
2 handfuls of mixed leaves
1 handful of Jar Croutons (see below)
2 burratina balls or 1 burrata
Salt
For the jar croutons:
300g sourdough bread, cut into cubes
3 tbsp olive oil
2 tsp red wine vinegar
Salt
For the herby dressing:
½ bunch of coriander
½ bunch of parsley
½ bunch of dill
2 tbsp capers
1 tbsp red wine vinegar
1 garlic clove
8 tbsp olive oil
1 red chilli, diced
Salt and freshly ground black pepper
