For the base:
85g butter
140g crushed digestive biscuits
15g caster sugar
For the filling:
900g cream cheese (I prefer Philadelphia)
250g caster sugar
45g plain flour
10g vanilla extract
1 lemon zest and juice
3 eggs
1 yolk
1 punnet fresh strawberries, diced
For the strawberry compote:
1 punnet fresh strawberries, halved
200g sugar
1 lemon juice
2 sprigs of basil, sliced, leaves only
