Ingredients
● 100g pomegranate seeds
● 100g dates
● 100g dried apple
● 100g dried figs
● 2 eggs
● 125g caster sugar
● 125ml vegetable or sunflower oil
● 6 tbsp honey
● Juice and zest of 2 oranges
● 450-500g self-raising flour
Method
● Heat your oven to 180°C.
● Lay the pomegranate seeds on an oven tray. Dry them in the oven for 10-15 minutes.
● Chop all the dried fruits into small pieces.
● Using a fork, mix the eggs, sugar, oil and honey. Add the orange juice and zest, the chopped fruits and the pomegranate.
● Add the flour slowly until the mixture forms a slightly sticky but not too sticky dough. Mix with your hands to start to form a ball. Make sure the mixture has no lumps of flour.
● Wrap the dough in clingfilm and refrigerate it for around 30 minutes to make it easier to handle or it will be very sticky.
● Line a couple of oven trays with baking parchment.
● Wet your hands and form golf ball-sized balls of mixture, and lay them out on the trays. They should not spread too much.
● Bake them at 180°C (fan) for approximately 10-15 minutes until golden brown.
● Serve drizzled with honey.
