I lead a busy lifestyle, so a healthy diet is important to me. I cannot stand microwave food and always try my best to prepare fresh dishes.
Mushrooms: I love them with everything, especially in a creamy sauce.
Bananas: I don't really have much of a sweet-tooth so just a simple banana, on its own, nothing fancy, will do me just fine for dessert.
Hummus: Can't have a pitta without it, and it is great for dipping carrots and peppers.
Risotto: As a vegetarian this is the perfect filling meal, but you have to add the stock bit by bit.
Vegetarian lasagne: This is my signature meal, I love to make it myself so I don't have to put any cheese in it (not a fan of cheese), just some veggie mince, pasta and a nice creamy sauce.
Dark-gilled and oriental mushrooms such as shitake mushrooms may be the healthiest varieties since they contain the phytochemical lentinan, which is thought to boost immunity and protect against cancer and viral infections.
Bananas are a good source of starchy carbohydrate, vitamins B6 and C and fruit sugars.
The soluble fibre in chickpeas helps lower blood cholesterol, but buy the low fat version, and reduce the sodium content of home-made hummus by using dried rather than tinned chickpeas.
Wholegrain (brown) long grain risotto rice retains the bran surrounding the kernel, making it nuttier in taste and richer in nutrients (vitamins, minerals and fibre). Healthy choices for "veggie mince" are soya protein, which helps to lower blood cholesterol, and the mycoprotein Quorn, which is a useful source of zinc for vegetarians.
