Today I'm winning.
Yesterday I bought cauliflower. I chose the one with leaves on over the trimmed one. It seemed the right thing to do and it was cheaper.
Now I know why.
More than half the price was for cauliflower foliage! Once I'd trimmed them off, I had the teeniest white, floretted vegetable i've ever seen. I had planned on roasting it for a salad. It will be a meagre salad.
The reason i'm feeling like the most balaboosta-y balaboosta is that I made soup from those leaves. I sauteed some spring onions that would otherwise have curled up sadly in my vegetable drawer with a smidge of olive oil. I added the chopped up leaves, sauteed some more and then added vegetable stock.
The whole lot simmered for 25 miinutes or so until the leaves were tender and I blitzed them into puree. I added a tablespoon of mustard and a splosh (bigger than a splash) of milk and voila - supper. Enough soup for two and all for around £1.
A further forage in the fridge uncovered natural yoghurt and a box of posh salad cress, which made a smart garnish.
And i've still got the roasted cauliflower portion for my lunch tomorrow. Genius.
