These vegetarian fritters are perfect to serve as a starter to a Thai meal

2 whole fresh corn cobs (or 200g frozen sweetcorn, defrosted)
75g fine beans
4 spring onions
4 lime leaves
2 tbsp chopped coriander
1 red chilli
2 tsp grated ginger
1 large clove garlic, crushed
100g rice flour
1 tsp baking powder
1 large egg (see tip)
salt
300–400ml sunflower oil, for deep-frying
Sweet chilli sauce, for dipping
Lime wedges, to serve
