I've tried many recipes over the years and this is the one I return to though it has been altered along the way. I like it without honey, just golden syrup but this is the more traditional version.
Makes: 3 x 800g loaves
Preparation: 20 minutes
Baking: 50 minutes to 1 hour
Ingredients
● 600g white spelt flour
● 6 tsp baking powder
● 450g caster sugar
● 4 tsp cinnamon
● 480g cold water
● 350g golden syrup
● 350g honey
● 445g sunflower oil
● 5 medium eggs
Method
● Preheat oven to 180°C and line 3 x loaf tins with baking parchment.
● Place the flour, baking powder, sugar and cinnamon in a large bowl. If using a free-standing mixer use the paddle attachment.
● Add the water and when it is thoroughly mixed in add the golden syrup; mix well then add the honey and the sunflower oil.
● Make sure each ingredient is fully mixed before the next is added. Finally, add the eggs one at a time. Pour into tins and bake until a skewer inserted in the centre comes out clean.
● The cake can be enjoyed straight away or keeps well if wrapped and stored somewhere cool.
