Pecan, oat and date bread

A quick bread that’s full of fruity flavours

The best things in life are free or very, very simple and this recipe is so simple you won't believe how great it tastes. Incredibly easy to make and delicious to eat.

Serves: 8 -10

Preparation: 10 minutes

Cooking : 55 minutes

Ingredients

450g self-raising flour

1 tsp bicarbonate of soda

70g rolled organic oats

80g soft brown sugar

110g pecans

3 tsp allspice

30g linseeds

80g dates

150ml milk

3 tbsp honey

1 egg

3 tbsp pomegranate molasses

3 tbsp olive oil

Method

● Heat your oven to 170°C and line a 22cm bread tin with baking paper.

● Mix the flour, bicarbonate of soda, oats, sugar, pecans, spice, linseeds and dates in a bowl.

● Add the milk, honey, egg, pomegranate molasses and olive oil and gently mix until everything is combined. Do not over mix - we do not want the gluten developed in this bread or it will be tough and chewy.

● Line a 22cm bread tin with baking paper and spoon the mix in.

● Bake for 45 – 55 minutes until golden brown.
