I first came across this salad at a catering stall. I liked it so much that I asked them for the recipe. They kindly shared it with me, and now it’s part of my salad repertoire! You can add a handful of chopped coriander for extra flavour.
- Remove the tough outer layer from the leeks. Trim off the root end and the green part. Slice the leeks lengthways, and then cut across finely into slices 5mm thick.
- Place the leeks, cherry tomatoes and sweetcorn in a serving bowl.
- Mix the mayonnaise with the mustard. Add the mayonnaise mixture to the leek mixture. Gently mix together until well coated. Season with salt and pepper. Serve.
