Leek and tomato salad

An unusual but tasty salad that uses sweet young leeks.

 I first came across this salad at a catering stall. I liked it so much that I asked them for the recipe. They kindly shared it with me, and now it’s part of my salad repertoire! You can add a handful of chopped coriander for extra flavour.

  • Remove the tough outer layer from the leeks. Trim off the root end and the green part. Slice the leeks lengthways, and then cut across finely into slices 5mm thick.
  • Place the leeks, cherry tomatoes and sweetcorn in a serving bowl.
  • Mix the mayonnaise with the mustard. Add the mayonnaise mixture to the leek mixture. Gently mix together until well coated. Season with salt and pepper. Serve.
Ingredients

3 – 4 slender leeks

300g  cherry tomatoes, halved

6 – 7 baby sweetcorn, sliced

2 tbsp mayonnaise

1 – 2 tsp mustard

Salt and pepper
