Ingredients
Short crust, 6 oz
honey, 3 generous tablespoonfuls
breadcrumbs, 4 tablespoonfuls
half a lemon


Line a sandwich tin with the pastry, pressing it well into the sides.
Warm the honey, add the breadcrumbs, the grated rind and juice o£ half a lemon, and mix together.
When cold, pour into pastry and spread evenly.
Cross with thin strips of pastry and bake in a hot oven for about 20 minutes.
