Having made history by becoming the first model with Down’s syndrome to appear on the cover of Vogue Italia, Ellie Goldstein is no stranger to breaking barriers and changing the landscape for people with disabilities.

But the 23-year-old’s latest escapade really puts the icing on the cake. Last week she stepped into the Celebrity Bake Off tent to take part in The Great Celebrity Bake Off for Stand Up To Cancer series.

Viewers saw Ellie, who was born into a Jewish family in Ilford, Essex, tasked with creating brandy snaps. True to her style, she took it to the next level – shaping her creations them into ice-cream cones and topping them with scoops of chocolate ice cream – a culinary flourish that left notoriously hard-to-please judge Paul Hollywood drooling.

With typical modesty, rather than focusing on the praise she received, Ellie recalls a humorous moment during her time on the show. “The highlight of my episode was the fun I had,” she says giggling. “I did an arm wrestle with [presenter] Alison Hammond.”
